BUDBUD TIKTIK


Tiktik is a flour like by-product when corn grain is milled.In this recipe all-purpose flour is mixed to make the budbud less coarse.Brown sugar is used to make the budbud brownish natural in color.Coconut meat is added for more texture.


Ingredients:

2 1/4 cups Tiktik
1 1/2 cups All-purpose flour
1/4 cup Milk
1 1/2 cup Brown sugar
1 1/2 cup Coconut milk
1/2 cup Grated coconut meat
 Banana leaves for wrapping

Procedures:

1. Mix all ingredients in a mixing bowl.
2. Mix well to eliminate lumps,
3. Put a little mixture to prepared banana leaf, roll and tie.
4. Boil water in a pot enough for the budbud to submerge with water.
5. Cook until done.

BANANA CORNMEAL LOAF

                                                     BANANA CORNMEAL LOAF



INGREDIENTS:

1 1/2 cups all purpose flour
1/2 cup cornmeal
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 large egg
1/2 cup milk
2 tablespoon oil
1 ripe banana, mashed
raisins, nuts (optional)

PROCEDURE:

1. Preheat oven to 350 deg Fahr. In a large bowl, combine flour, cornmeal, baking soda, baking
    powder, salt and sugar.Mix to combine. Make a well in the center.

2. In a medium bowl, beat the egg, milk and oil. Fold in banana. Add the mixture to flour mixture,
    stirring until just combined.

3. Pour batter into a well-greased 9cm x25cm loaf tin.Bake for 40 minutes until loaf is well browned.
    Cool in wire rack.

MAKES 1 LOAF.
 
The cornmeal added the more texture of the loaf as well as fiber.

US DEHYDRATED POTATO STEAM PUTO

This is basically steam puto recipe mixed with US Dehydrated Potato into the mixture to make it more moist and flavorful which give it a uniquely smooth and velvety texture.You can make your own puto flavor variations and fillings on this recipe.

Ingredients:
         all purpose flour  1 1/2 CUPS
         US Dehydrated Potato Flakes    110 grams
         baking powder   2 tablespoons
         refined sugar    1/2 cup
         salt    1/4 teaspoon
         fresh milk    1 1/2 cups
         coloring/flavoring

Procedures:
          1. Mix all -purpose flour, US Dehydrated Potato Flakes, baking powder, refined sugar and
              salt in a bowl.
           2. Add the fresh milk into the dry ingredients. Mix well and strain to eleminate lumps.
           3. Pour mixture into paper-lined plastic puto cups.Use 3-ounce paper cups (#3).
           4. Steam at high heat for 20 minutes.
               Makes at least 25 pieces.
